6 lg golden delicious apples, peeled, cored, and halved. 3 cut into 1 inch pieces, 3 cut into 1/4 inch wedges.
1 cup apple juice
6 Tbs packed light brown sugar
1 tsp cinnamon
2/3 cup (2 oz) old fashion oats
1/3 cup grape nuts cereal
1/4 cup (1 1/4 oz) all purpose flour
3 Tbs unsalted butter, melted and cooled
1/8 tsp salt
Adjust oven rack to upper middle position and preheat to 400. Bring apple pieces, juice, 1 Tbs sugar, 1/2 tsp cinnamon to simmer in 12" skillet over medium heat. Cover and cook, stirring occasionally, until apples are tender, about 15 minutes. Transfer mixture to bowl and mash apples until finely mashed. Reserve 1 Tbs mixture. Return remaining mashed apple mixture to skillet with apple wedges and cook until wedges begin to soften, about 3 minutes.
Process 1/3 cup oats in food processor until finely ground, about 20 seconds. Combine remaining sugar, processed oats, remaining oats, grape nuts, flour, butter, reserved apple mash, 1/2 tsp cinnamon, and salt, stirring until mixture appears crumbly.
Scrape apple mixture into 8 inch square baking disk and press into even layer. Top with streusel and bake until juices are bubbling and topping is deep golden brown, about 25 minutes. Let cool on wire rack 15 minutes.
